New favorite recipes

This past weekend was out sister-in-law's birthday celebration. Bobby and I along with our neighbors and a few other friends celebrated her big 3-0 with a luau party! We all contributed to to the potluck dinner, and ended up with an amazing spread. I contributed two new recipes - crispy sweet potato "fries" and carrot cake with cream cheese frosting.

Sweet potato fries are from a new blog I found, Forgiving Martha, and the recipe is truly amazing. No soggy sweet potatoes if you follow this recipe!

By the time I thought to take a picture they were already almost gone!

The birthday girl requested a carrot cake, and since I didn't have a recipe in my repertoire, I went searching on allrecipes.com, and found a highly rated recipe. This carrot cake features shredded coconut and crushed pineapple. I am not a carrot cake fan myself, but it was pretty good. However, I do love a good cream cheese frosting, and that recipe was a-maz-ing.
